How do you relate light interception from a single plant from growth chamber to light interception of the row of plants in the field, for example, soybean?

Scaling up measurements from a single plant in a growth chamber to the field is extremely difficult. While the growth chamber may represent ideal conditions, the field can have many things that would reduce light interception like disease, nutrient deficiencies, and water deficits. My recommendation would be to measure interception in both cases.
